Ingredients

 

 

1 1/2 lb. stew beef

 

3 medium potatoes, cut into small chunks

 

3 medium carrots, cut into small chunks

 

8 oz white mushrooms, sliced

 

1 small yellow onion, chopped

 

2 garlic cloves, minced

 

2 tablespoon Italian seasoning

 

1 cup uncooked pearl barley

 

1/4 cup flour

 

1/2 teaspoon salt

 

1/2 teaspoon pepper

 

2 tablespoon olive oil

 

2 bay leaves

 

3 tablespoon tomato paste

 

4 cups beef broth

Instructions

Step 1

In medium bowl combine flour, salt, pepper.

 

Add meat. Toss to coat.

 

Step 2

In large pot heat oil over medium heat, add meat, cook until well browned, about 5 minutes.

 

Remove meat, set aside.

Step 3

Add onion, cook to soften.

 

Add garlic, carrots, potatoes, mushrooms, Italian seasoning, salt, pepper, beef broth, reserved meat.

 

Bring to a boil.

Step 4

Reduce heat, cover with a lid and simmer for 30 minutes.

 

After 30 minutes add barley and continue to simmer for additional 45 minutes until barley is cooked and meat is tender.

Step 5

Serve with garlic bread.
