Ingredients

2 cup all-purpose flour

 

1 1/2 teaspoon baking powder
 

1/2 teaspoon salt


1/4 cup butter, softened


1 cup sugar


8 oz ricotta, whole milk


2 tablespoons lemon juice


1 tablespoon lemon zest


1 teaspoon vanilla extract


1 egg

 

For Icing


1 cup powdered sugar


2 tablespoons whole milk


2 tablespoons lemon juice


Sprinkles
 

Instructions

Step 1

Preheat oven to 350 degrees. Line two baking sheets with parchment paper. 

 

In medium bowl, whisk together the flour, baking powder, and salt. Set aside.
 

Step 2

In a large bowl, with a hand mixer, mix butter and sugar. Add in the ricotta, vanilla, egg, lemon juice, and lemon zest. Mix well. 
 

Step 3

Add the dry ingredients and mix just to combine.

Step 4

Use a small cookie scooper to drop the mixture onto prepared cookie sheets.

 

Bake 15 minutes. Allow time to cool.

Step 5

Whisk together powdered sugar, milk, and lemon juice until smooth. Set aside.
