1 pound ground beef
3/4 onion, chopped
1/3 cup bread crumbs
1 egg, slightly beaten
1 packet (1.25 oz) taco seasoning
1/4 cup barbecue sauce
1/2 teaspoon salt
2 pounds russet potatoes, peeled and diced
2 tablespoons butter
2/3 cup milk
Salt
Ground black pepper
1.5 cups Mexican style four cheese blend shredded cheese
In a large bowl, combine ground beef, onion, bread crumbs, egg, barbecue sauce, taco seasoning and 1/2 teaspoon salt. Mix thoroughly then gently press into bottom of 9-inch square baking pan.
Bake for 20-25 minutes. Carefully pour off drippings.
While the meatloaf is cooking, add the potatoes to a pan and cover with water. Cook over medium heat until tender.
Drain the water from the potatoes.
In a medium bowl, mash cooked potatoes with milk, butter, and 1/2 cup cheese.
Season to taste with salt and pepper.
Spread over meatloaf. Sprinkle with cheese. Return to oven for 15 minutes
