3 medium potatoes

 

1 egg

 

1 1/2 cup parmesan cheese, grated

 

1/4 cup all-purpose flour

 

1 tablespoon chives

 

1 tablespoon dill

 

1/2 teaspoon salt

 

1/4 teaspoon black pepper

 

1 teaspoon garlic

 

3 tablespoon olive oil
 

Instructions

Step 1

Cook potatoes until tender, about 25 - 30 minutes.

Step 2

Mash with potato masher.

Set aside to cool.

Step 3

In medium-sized bowl combine 1 cup parmesan cheese, egg, garlic, flour, chives, dill, salt, pepper, mix until all ingredients combine.

Step 4

Place 1/2 cup parmesan cheese into a shallow dish.

Scoop mixture using large cookie scoop and place cakes in parmesan to coat.

Makes 8 cakes.

Step 5

Preheat large cooking pan over medium heat.

Add oil and cook cakes until golden brown, about 3 minutes on each side.

Step 6

Garnish with cheese and dill.
