Stuffed Baked Potatoes

5 Baked Russet potatoes

 

1/2 cup butter, softened

 

2 cups shredded mild cheddar cheese, divided

 

1 ranch salad dressing mix packet

 

1/2 cup sour cream

 

Green onion

 

1/2 teaspoon salt

 

1/2 teaspoon pepper
 

Instructions

Step 1

Bake potatoes at 400 degrees for one hour or until tender.

 

Step 2

Cut each potato top off.

 

Scoop out the potato pulp, leaving a thin shell.

Step 3

In a large mixing bowl, beat the potato with butter, stir in one cup of cheese, salad dressing mix, salt, pepper.

 

Spoon into potato shells.

Step 4

Sprinkle with cheese.

 

Place on baking sheet.

 

Bake for 15 - 20 minutes or until heated through.

Step 5

Top with sour cream and green onion.
